Kalua Pork Nachos

Taking nachos and doing them island style, with Kalua Pork, fresh pineapple mango salsa, and a creamy cilantro mayo.

Beehive Meals Kalua Pork
1/2 bagTortilla Chips
1 cupShredded Cheddar Cheese
1/4 cupPurple Cabbage
PINEAPPLE MANGO SALSA:
1 cupFresh Pineapple (diced)
1/4 cupFresh Mango (diced)
1/4 cupRed Bell Pepper (diced)
1 tspJalapeno (minced)
1/4 cupRed Onion (diced small)
1 TbspFresh Cilantro (chopped)
1/2Fresh Limes, Juice From
1 tspFresh Lemon Juice
1/4 tspSalt
1/8 tspBlack Pepper

Instructions

Step 1:

Follow Slow Cooking Instructions to cook Kalua Pork.

Step 2:

Add all the ingredients for Pineapple Mango Salsa in a bowl and combine.

Place chips and cheese on plate or tray and top with cheese and Beehive Meals Kalua Pork.

Step 3:

Place in oven and broil until cheese is melted. Remove from oven and top with Pineapple Mango Salsa, sliced purple cabbage, and drizzle with your favorite Cilantro Avocado Mayo or sauce.
