Sweet Chicken Chilaquiles
Corn tortilla chips cooked in a delicious homemade salsa tossed with our Sweet Chicken Tacos, topped with fried egg, fresh cilantro, and cotija cheese.

1/4 | Large Yellow Onions, diced |
1/4 | Jalapeno, diced |
2 Tbsp | Cilantro |
1 tsp | Minced Garlic |
1/8 tsp | Salt |
Pinch | Black Pepper |
1/4 cup | Low Sodium Chicken Broth |
4 cups | Thick Corn Tortilla Chips |
2 Tbsp | Shredded Mozzarella Cheese |
2 | Fried Eggs |
To Taste | Queso Crema |
To Taste | Diced Avocado |
To Taste | Cilantro |
To Taste | Cotija Cheese |
To Taste | Sliced Jalapenos |
Instructions

Step 1:
Follow Slow Cooking Instructions to cook chicken from our Sweet Chicken Tacos.

Step 2:
Blend diced tomatoes, onions, cilantro, jalapenos, chicken broth, minced garlic, salt, and pepper together then cook in a large pot over medium heat for about 5-10 minutes until slightly thickened.

Step 3:
Add shredded mozzarella cheese and tortilla chips and stir until combined.
In a separate pan, fry eggs, then place on top of salsa coated chips. Drizzle queso crema on top, and top with diced avocado, fresh chopped cilantro, sliced jalapenos, and fresh lime.

Step 4:
Serve, and enjoy!
