A Cafe Rio style burrito stuffed to the brim with Sweet Pork, cilantro lime rice, black beans and cheese, and topped with enchilada sauce, smothered with cheese, then topped with delicious tomatillo ranch dressing.

Step 1:
Follow Slow Cooking Instructions to cook pork from our Sweet Pork.
Step 2:
Place cilantro lime rice, black beans, shredded colby jack cheese, and Beehive Meals Sweet Pork in center of tortilla.
Step 3:
Tuck edges in and fold. Place burrito in an oven safe dish, then smother with green chile enchilada sauce and more shredded colby jack cheese. Place in oven and broil for about 5-7 minutes at 450 degrees, until cheese is melted.
Step 4:
Drizzle with tomatillo ranch and fresh cilantro. Serve with a side salad and enjoy!
