A simple and delicious appetizer topped with our Apricot Chicken that will have everybody asking for seconds.
|1/2 cup||Beehive Meals Apricot Chicken|
|1||Small French Baguette|
|1/2 cup||Marscapone Cheese or Spreadable Goat Cheese|
|OLIVE OIL TOPPING:|
|1/4 cup||Olive Oil|
|2 Tbsps||White Balsamic Vinegar|
|2 Tbsps||Minced Red Onion|
|2 Tbsps||Bacon Bits|
|1 Tbsp||Minced Garlic|
|2 Tbsps||Fresh Basil, chopped|
|2 Tbsps||Fresh Parsley, chopped|
|1/2 tsp||Crushed Red Pepper Flakes|
|To taste||Salt & Pepper|
Follow Slow Cooking Instructions to cook chicken from our Apricot Chicken.
In a small bowl, combine all of the ingredients for the dressing. Set aside.
Slice french baguette diagonally and through the middle like you would a sandwich. You can make the crostinis as big as you want and use it as an entree, or cut them in small diagonal pieces and serve it as an appetizer!
In a saute pan, melt butter and place bread in the butter to toast it until perfectly golden brown and crispy. Remove from pan, then evenly spread 2 Tablespoons of Marscapone or Goat cheese on the crostini, then top with 1 Tablespoon of olive oil and herb mixture.
Top each crostini with 1/4 cup of Beehive Meals Apricot Chicken. Drizzle with balsamic glaze and garnish with fresh chopped parsley. Enjoy!
