Apricot Chicken Crostini

A simple and delicious appetizer topped with our Apricot Chicken that will have everybody asking for seconds.

Beehive Meals Apricot Chicken
1Small French Baguette
1/2 cupMarscapone Cheese or Spreadable Goat Cheese
OLIVE OIL TOPPING:
1/4 cupOlive Oil
2 TbspsWhite Balsamic Vinegar
1 TbspHoney
2 TbspsMinced Red Onion
2 TbspsBacon Bits
1 TbspMinced Garlic
2 TbspsFresh Basil, chopped
2 TbspsFresh Parsley, chopped
1/2 tspCrushed Red Pepper Flakes
To tasteSalt & Pepper

Instructions

Step 1:

Follow Slow Cooking Instructions to cook chicken from our Apricot Chicken.

Step 2:

In a small bowl, combine all of the ingredients for the dressing. Set aside.

Slice french baguette diagonally and through the middle like you would a sandwich. You can make the crostinis as big as you want and use it as an entree, or cut them in small diagonal pieces and serve it as an appetizer!

Step 3:

In a saute pan, melt butter and place bread in the butter to toast it until perfectly golden brown and crispy. Remove from pan, then evenly spread 2 Tablespoons of Marscapone or Goat cheese on the crostini, then top with 1 Tablespoon of olive oil and herb mixture. 

Step 4:

Top each crostini with 1/4 cup of Beehive Meals Apricot Chicken. Drizzle with balsamic glaze and garnish with fresh chopped parsley. Enjoy!
