Instructions
1. Follow Slow Cooking Instructions to cook Beehive Meals Apricot Chicken.
2. Begin by preparing the chicken salad. In a medium bowl, combine Greek yogurt, light mayo, Dijon mustard, and lemon juice. Mix until smooth. Then add Beehive Meals Apricot Chicken, the diced celery and red onion. Stir to coat evenly. Season with salt and pepper to taste.
3. Toast the bread slices if desired. Then spread the chicken salad mixture evenly over the bread, then top with the second slice of bread.
4. Slice the sandwich in half and serve with a side of fresh vegetables or a small piece of fruit for added balance.
