Carne Asada Pupusas

Handmade corn masa pupusas filled with melted cheese and savory refried beans, topped with tender, shredded Carne Asada, crisp shredded lettuce, and fresh pico de gallo. A hearty and flavorful classic with a modern twist!

Ingredients
1 1/2 cups Beehive Meals Carne Asada
1/2 cup Maseca Instant Corn Masa Mix
1/4 cup Refried Beans
1/4 cup Shredded Mozzarella Cheese
1/2 cup Shredded Lettuce
2 Tablespoons Pico de Gallo
Instructions
1. Follow Slow Cooking Instructions to cook Carne Asada.
2. Add Maseca Instant Corn Masa Mix, water, vegetable oil, and salt together in a bowl according to instructions on the package. Stir and combine. Be aware that you may need to add an additional tablespoon of water at a time to achieve the desired texture. It should be well combined with no clumps, moist and slightly sticky, without sticking to your fingers.
3. Split the dough into 80g balls. In a separate bowl, combine refried beans and the mozzarella cheese. Next, spray cooking oil onto your clean hands, and lightly flip the dough balls back and forth between your hands to create a flat, circular shape about 1/2 inch thick. Do not press too hard, you don't want the dough to be too thin.
4. Next, add 2 Tablespoons of the bean and cheese mixture to the center of each circle. Wrap the edges of the dough around the bean and cheese, and pinch edges to ensure filling doesn't spill out of dough during cooking.
5. Add 2 Tablespoons of your preferred cooking oil to a large pan on medium to medium-high, then place as many pupusas to the pan as you can fit, without over-crowding the pan. Cook until there are light brown circles, just like a tortilla, on each side.
6. Top each pupusa with Beehive Meals Carne Asada, the shredded lettuce and pico de gallo. Top with any of your other favorite toppings, such as guacamole or sour cream. Enjoy!
