Mississippi Pot Roast Baked Potato

Herby, tangy and delicious Mississippi Pot Roast served over a baked potato.

Ingredients

1 1/3 cups Beehive Meals Mississippi Pot Roast
2 Russet Potatoes 
Optional Toppings: Butter, Salt, Pepper 

Instructions

1. Follow Slow Cooking instructions according to directions for Mississippi Pot Roast.

2. Using a fork, poke several holes around the potato to allow steam to escape while baking.

3. Place the potato directly on the oven rack or on a baking sheet. Bake for 50–60 minutes at 400 degrees, or until the skin is crispy and the inside feels soft when pierced with a fork.

4. Let the potato cool slightly, then slice it open lengthwise. Fluff the inside with a fork, add Beehive Meals Mississipi Pot Roast and any desired toppings

5. Serve, and enjoy!
