Salsa Verde Chicken
Pasta Salad

A classic pasta salad with a Mexican twist! Rotini pasta, black beans, corn, pico de gallo, and loaded with our Salsa Verde Chicken makes for a delicious, refreshing, and filling meal that fits your macros!


Recipe and Ingredients

1 cup
chicken (98g) + sauce (99g)
Beehive Meals Salsa Verde Chicken
1 cup (84g)Rotini Pasta, dry
1/4 cup (65g)Black Beans
1/4 cup (42g)Roma Tomato, diced
1/4 cup (36g)Corn
2 Tbsp (16g)White Onion, diced
1/4 cup (38g)Avocado, diced
1/2 tspGarlic, minced
1/4 cup (6g)Cilantro, chopped
1  1/2 tsp (3g)Fresh Jalapeno, minced (optional)
1/4 cup (62g)Homemade Mexican Dressing
1/4 cup (28g)Pepperjack Cheese, shredded
To TasteSalt & Pepper


Step 1:

Follow Slow Cooking Instructions to cook Salsa Verde Chicken. 

Step 2:

In a large pot, boil pasta. Drain, and set aside. While water is boiling and pasta is cooking, prepare healthy homemade mexican dressing by adding all the ingredients in a bowl and stir until combined. Set aside.

In a large bowl, add black beans, tomato, corn, onion, avocado, garlic, cilantro, jalapeno, homemade Mexican dressing, pepperjack cheese, salt and pepper to taste. Stir to combine.

Step 3:

Add cooked pasta and Beehive Meals Salsa Verde Chicken to bowl with condiments, and stir until combined.

Serve immediately and enjoy, or place in an airtight container and store in fridge for 2-3 hours to chill the pasta.
