Breakfast Casserole Quesadilla

Our delicious Breakfast Casserole served as a cheesy, golden brown gluten-free quesadilla. These are delicious for savory meal on the go, or fun for a late breakfast in the morning on the weekends!

1 1/3 cups Beehive Meals Breakfast Casserole
2 Gluten-Free Tortillas
1 Tablespoon Butter
2 cups Shredded Colby Jack Cheese
Guacamole, Salsa, or Sour Cream for Dipping

3 Tablespoons Butter
6 cups Shredded Colby Jack Cheese

4 Tablespoons Butter
8 cups Shredded Colby Jack Cheese

Instructions
1. Follow Slow Cooking Instructions to cook Beehive Meals Breakfast Casserole.
2. Evenly spread the butter on one side of each tortilla. Place, buttered side down, on a griddle over medium-low heat, then evenly spread 1 cup of shredded colby jack cheese over the whole tortilla. Evenly spread 1 serving of Beehive Meals Breakfast Casserole on one half of the quesadilla. Place a large lid over the quesadilla to allow the cheese to melt.
3. Once the cheese is melted, fold in half over the side with the Breakfast Casserole. Cook until lightly golden brown on both sides.
4. Slice, then serve with your favorite dippings for quesadillas, such as fresh guacamole, fresh salsa, or sour cream! Enjoy, and serve with a side of fresh fruit.
