
Chicken Alfredo over Spaghetti Squash

Roasted spaghetti squash topped with a rich, slow-cooked Chicken Alfredo and topped with an extra sprinkle of Parmesan for a wholesome, low-carb twist on a classic.

Ingredients
1 Cup Beehive Meals Chicken Alfredo
1 Small Spaghetti Squash
1 Teaspoon Italian Seasoning
2 Tablespoons Red Onion, diced
1 Tablespoon Garlic, minced
1/2 Cup Parmesan Cheese, grated
Olive Oil, to taste
Instructions
1. Follow cooking instructions to cook Chicken Alfredo.
2. Slice spaghetti squas in half, scoop out seeds. Place face up on a baking sheet covered in foil. Drizzle with olive oil and season with salt, pepper, Italian seasoning then minced garlic. Flip over, face down and bake at 400 degrees for 40 minutes until tender.
3. Remove from the oven and use a fork to "shred" spaghetti squash.
4. Using squash as the serving bowl. top with Chicken Alfredo, sprinkle with red onion, shredded parmesan cheese and a little more Italian seasoning over top.
