Tender beef slow-cooked in a rich, smoky chile Colorado sauce, wrapped in soft tortillas, and topped with melty cheese for a bold and flavorful enchilada dish.

2 large flour tortillas
1 cup shredded cheddar cheese
1/3 cup avacado, diced
3 Tablespoons sour cream

4 large flour tortillas
2 cups shredded cheddar cheese
2/3 cup avacado, diced
1/3 cup sour cream

4 cups Beehive Meals Chile Colorado Beef
6 large flour tortillas
3 cups shredded cheddar cheese
1 cup avacado, diced
1/2 cup sour cream

Ingredients

5 1/3 cup Beehive Meals Chile Colorado Beef
8 large flour tortillas
4 cups shredded cheddar cheese
1 1/3 cup avacado, diced
2/3 cup sour cream

Instructions

1. Follow cooking instructions to cook Chile Colorado Beef.

2. To your flour tortilla, add Chile Colorado Beef and cheddar cheese, roll up to form enchilads.

3. Place enchilada folded side down in a greased 9x13 pan.

4. Sprinkle tops of tortillas with leftover Chile Colorado Beef Sauce and more cheddar cheese. 

5. Bake at 350° until golden brwon and cheese is melted. Serve with topped with sour cream and avacodo. Enjoy!
