
Chile Colorado Beef Hasselback Potatoes

Crispy hasselback potatoes filled with tender chile Colorado beef and topped with melted cheese for a flavorful twist on a classic favorite.

8 russet potatoes
2/3 cup butter, melted
1 1/3 cup shredded cheddar cheese
2/3 cup sour cream

Instructions
1. Follow cooking instructions to cook Chile Colorado Beef.
2. Thinly slice potatoes vertically across the width of the potato, but not cutting all the way throug, so it creates the hasselback shape.
3. Brush potatoes with melted butter in between each slice and salt & pepper generously.
4. Bake potatoes at 400° for 45 minutes - 1 hour until soft.
5. Top potato with Chile Colorado Beef, cheddar cheese, sour cream, and green onion. Enjoy!
