Cilantro Lime Chicken Breakfast Bowl

Our slow cooked and flavorful Cilantro Lime Chicken served as a delicious and protein packed breakfast bowl with crispy hashbrowns, egg whites, and sauteed veggies!

Instructions
1. Follow Slow Cooking Instructions to cook Beehive Meals Cilantro Lime Chicken.
2. In a large saute pan, heat the olive oil over medium-high heat, then add the cubed hashbrowns to the pan. Season them to your liking with garlic powder and seasoning salt. Cover with a lid, then allow to crisp up on the bottom, about 5-7 minutes, then stir. Add the diced red bell peppers. Continue to cook until potatoes are crispy on the outside, but soft and tender on the inside, and the peppers are tender yet crispy. Then set aside.
3. In a smaller saute pan, heat some olive oil in the pan, then cook your egg whites. Season to taste with salt and pepper.
4. Begin assembling your breakfast bowl. In each bowl add the crispy hashbrowns, then top with the fluffy egg whites, and finally top it off with Beehive Meals Cilantro Lime Chicken. We suggest adding a sprinkle of part-skim mozzarella cheese and extra salsa for some added flavor! If you love sour cream, a dollop of non-fat plain greek yogurt would be a perfect substitute. Enjoy!
