
Citrus Onion Pork Pasta Salad

This light and zesty pasta salad pairs tender Citrus Onion Pork with bowtie pasta, roasted red peppers, capers, lemon juice, and fresh Parmesan for a refreshing twist on a classic dish.

1/2 Cup, Citrus Onion Pork
1/2 Lbs. Bowtie Pasta, cooked
1/2 Cup, Roasted Red Peppers
1 Tablespoon, Capers
1 Lemon, juiced
1/4 Cup Parmesan, shredded fresh

1 1/2 Lbs. Bowtie Pasta, cooked

2 Lbs. Bowtie Pasta, cooked

Instructions
1. Follow cooking insturctions to cook Citrus Onion Pork.
2. Cook pasta per box instructions in salted boiling water. Drain, add a little oil so they don't stick together, toss and set aside to cool.
3. Chop peppers and saute with butter/oil of choice until tender. Add a little salt & pepper to taste.
4. When pasta is cooled, toss with shredded pork, peppers, capers, lemon juice and parmesan. Toss until pasta is well coated, adding more liquid from the crockpot as needed.
