French Dip over Mashed Potatoes

Tender, slow-cooked shredded beef served atop creamy, fluffy mashed potatoes.

2 Russet Potatoes
3 Tablespoons Butter

Instructions

1. Follow Slow Cooking Instructions to cook Beehive Meals French Dip.

2. Peel the skins off of the potatoes, then wash them very well. Slice them into about 1 1/2" cubes. Add to a large pot of lightly salted boiling water. Boil the potatoes in the water for about 10-12 minutes. You'll know the potatoes are ready when you grab a fork and can insert the fork into the potatoes and remove it easily, this lets you know that the potatoes are tender enough to be mashed.

3. Drain water from potatoes. In a large microwave safe bowl or measuring cup, heat the milk and the butter in the microwave for about 30 seconds. With the hot potatoes and the warm milk and butter, it combines into the mashed potatoes much better and leaves you with deliciously rich potatoes. Add the sour cream, and mash with a potato masher to reach your desired consistency. Add more milk if you want it a little creamier, and feel free to even add some shredded mozzarella or parmesan cheese for a creamier mashed potato, or add less milk than listed on the instructions for a fluffier mashed potato.

4. Season the mashed potatoes to taste with garlic powder, or any of your favorite seasonings!

5. Serve Beehive Meals French Dip over the homemade mashed potatoes, using the au jus as the gravy, and serve with a side of grilled vegetables, and enjoy!
