4 Eggs, scrambled
1 Cup mozzarella cheese, finely shredded
1/8 Box Fresh Chives, chopped fine
Hot sauce of choice to taste
1/2 Avocado, sliced lengthwise

16 Eggs, scrambled
4 Cups mozzarella cheese, finely shredded
1 Box Fresh Chives, chopped fine
Hot sauce of choice to taste
2 Avocados, sliced lengthwise
Instructions
1. Follow cooking instructions to cook Honey Buffalo Beef Tips.
2. Prepare Eggs into a bowl and whisk with salt and pepper to taste.
3. Warm a non-stick frying pan, then prepare the surface with non-stick cooking spray of choice or a pat of butter.
4. Pour egg mixture (approximately 2 eggs per omelette) into the pan, then swirl to coat the entire surface.
5. Let eggs cook until almost set then sprinkle with cheese over 1/2.
6. To the cheesy side of the omelette, add warmed Beef tips, some sauce from the crockpot, chives and a couple drops of hot sauce - if desired.
7. Let cook for a minute or 2 more until warmed through and the cheese is melted.
8. Flip the opposite side of the egg over top to form the classic omelette and slide onto a plate.
9. Garnish with a little more chives and avocado slices.
