Ingredients

1  1/3 cups Beehive Meals Pork Carnitas
2 Large Burrito Tortillas
4 Eggs, Scrambled
1/2 cup Hashbrowns
1/2 cup Shredded Colby Jack Cheese
1/2 Fresh Avocado, sliced
1/4 cup Fresh Salsa for Dipping

6 Large Burrito Tortillas
12 Eggs, Scrambled
1  1/2 cups Hashbrowns
1  1/2 cups Shredded Colby Jack Cheese
1  1/2 Fresh Avocado, sliced
3/4 cup Fresh Salsa for Dipping

5  1/3 cups Beehive Meals Pork Carnitas
8 Large Burrito Tortillas
16 Eggs, Scrambled
2 cups Hashbrowns
2 cups Shredded Colby Jack Cheese
2 Fresh Avocadoes, sliced
1 cup Fresh Salsa for Dipping

Instructions

1. Follow Slow Cooking Instructions to cook Beehive Meals Pork Carnitas.

2. Begin by cooking your hashbrowns. Add them to a large pan or griddle, lightly greased with a little bit of olive oil, then spread the hashbrowns on the pan or griddle. Season generously with your favorite seasonings, we do seasoning salt and garlic powder. Cover with a lid and cook for 5 minutes, then remove lid and continue to cook and stir until hashbrowns are the desired crispiness and cook that you want them!

3. Now, scramble your eggs. We prefer to add a splash of milk, as well as seasonings to the eggs before scrambling, but it is not necessary. Scramble until cooked. Then set aside.

4. Now, begin assembling your delicious breakfast burritos! In the center of each tortilla, place 1/4 of a sliced avocado, then top with the hashbrowns, scrambled eggs, Beehive Meals Pork Carnitas, and the shredded colby jack cheese. Tuck edges in, then fold and roll the burrito.

5. If desired, crisp both sides of the burrito on a pan/griddle over medium-low heat until they are perfectly golden brown! Then serve with your favorite salsa for dipping!

6. Feel free to prep these ahead of time and store in your freezer for a quick, on-the-go breakfast, or dig in and enjoy right away!
