1 1/2 Cups Sweet or Russet potatos, diced and roasted
6 Eggs
1 1/2 Cups cheddar cheese, shredded (divided)
6 Tablespoons sour cream or greek yogurt as garnish

2 Cups Sweet or Russet potatos, diced and roasted

Instructions
1. Follow cooking instructions to cook Sausage and Peppers
2. In a small bowl scramble eggs, salt and pepper if desired.
3. Portion out meat mixture then stir into eggs.
4. Add potatoes and half of the cheese and mix well.
5. Pour egg mixture into a buttered frying pan and cook until eggs are set.
6. Flip or fold onto a plate and add remaining cheese on top.
7. Serve with a dollop of sour cream.
