
Sausage and Peppers Stuffed Portobellos

Sausage & Peppers Stuffed Portobellos are hearty, golden-baked mushrooms filled with savory sausage, sautéed peppers, tender grains, and melty mozzarella, topped with buttery breadcrumbs.

Ingredients
2 servings of Beehive Meals Sausage and Peppers
1 Large Portobello Mushroom, washed and dried
1 Cup Rice/Quinoa, prepared
1 Cup Mozzarella, shredded (divided)
1/4 Cup Seasoned breadcrumbs, crumbled
1 Tablespoon Butter, melted

1/2 Cup Seasoned breadcrumbs, crumbled

3 Large Portobello Mushrooms, washed and dried
3 Cups Rice/Quinoa, prepared
3 Cups Mozzarella, shredded (divided)
3/4 Cup Seasoned breadcrumbs, crumbled
3 Tablespoons Butter, melted
Ingredients
8 servings of Beehive Meals Sausage and Peppers
4 Large Portobello Mushrooms, washed and dried
4 Cups Rice/Quinoa, prepared
4 Cups Mozzarella, shredded (divided)
1 Cup Seasoned breadcrumbs, crumbled
4 Tablespoons Butter, melted
Instructions
1. Follow cooking instructions to cook Sausage and Peppers
2. Drizzle mushroom(s) with olive oil, then add salt and pepper to taste.
3. Arrange seasoned mushrooms on a parchment lined sheet pan.
4. To the finished meat mixture, stir in cooked grain of choice and half of the shredded cheese and mix well.
5. Spoon filling into mushrooms.
6. toss melted butter with seasoned breadcrumbs. Set aside.
7. Bake filled mushrooms at 350 for 25-30 minutes or until they are fork tender.
8. Remove from the oven and top with remaining shredded cheese and buttered breadcrumbs.
9. Return to the oven for an additional 5 minutes until the cheese is melted.
