1/2 Cup Monterey Jack cheese, shredded
1/8 Cup Cotija Cheese, crumbled
Cilantro, chopped to taste
Tajin seasoning, to taste
Chipotle Aioli or hot honey

1 Cup Monterey Jack cheese, shredded
1/2 Cup Cotija Cheese, crumbled

3/4 Cup Cotija Cheese, crumbled

Instructions
1. Follow Cooking instructions to cook Street Corn Mac n' Cheese.
2. Preheat your waffle iron.
3. Just before cooking, spray iron with cooking spray then sprinkle iron with shredded cheese to form a base.
4. Spoon cooled mac n' cheese onto the hot iron, top with a little more cheese and close the lid.
5. Cook for 3-4 minutes. Then carefully lift with a fork and slide onto a plate to cool for 1 minute.
6. Top with crumbled cotija, cilantro, drizzle or aioli or hot honey and a sprinkling of Tajin seasoning.
