3/4 Cup Bacon Bits, optional

8 Russet or Sweet Potatos
2 Cups Mozzarella Cheese, shredded
1 Cup Bacon Bits, optional

Instructions

1. Follow cooking instructions to cook Swedish Beef Tips.

2. Bake potatoes at 350 degrees for 45 minutes to 1 hour until fork tender

3. Remove from the oven and split potatoes lengthwise.

4. Scoop potato out into bowl and mash slightly.

5. Mix potato with beef tips filling and stir well to incorporate. Add more sauce to reach the desired ratio.

6. Fill potato skin with meat misture and top with Mozzarella cheese and bacon.

7. Return to the oven to rewarm at 350 degrees for 15-20 minutes or until the cheese is melted and slightly browned.
