Sweet Chicken Tacos Mexican Casserole

Our sweet and zesty Sweet Chicken Tacos made into a delicious casserole dish that is easy to prepare, but so delicious!

Ingredients

1  1/3 cups Beehive Meals Sweet Chicken Tacos
4 Corn Tortillas, cut into quarters
1/2 cup Red Enchilada Sauce
1  1/2 cups Shredded Colby Jack Cheese
1/4 cup Black Beans

2 cups Rotini Pasta
2 cups Chicken Broth
1/4 cup Enchilada Sauce
1/2 cup Fairlife Whole Milk
1/2 cup Shredded Mozzarella/Monterey Jack Cheese

4 cups Beehive Meals Sweet Chicken Tacos
3 cups Rotini Pasta
3 cups Chicken Broth
1/3 cup Enchilada Sauce
3/4 cup Fairlife Whole Milk
3/4 cup Shredded Mozzarella/Monterey Jack Cheese

Ingredients

5  1/3 cups Beehive Meals Sweet Chicken Tacos
4 cups Rotini Pasta
4 cups Chicken Broth
1/2 cup Enchilada Sauce
1 cup Fairlife Whole Milk
1 cup Shredded Mozzarella/Monterey Jack Cheese

Instructions

1. Follow Slow Cooking Instructions to cook Beehive Meals Sweet Chicken Tacos.

2. In a mixing bowl, combine Beehive Meals Sweet Chicken Tacos, half of the shredded colby jack cheese, half of the enchilada sauce, and the black beans. Then, prepare your corn tortillas by cutting them into four quarters.

3. In a lightly greased baking dish, evenly spread a thin layer of the enchilada sauce on the very bottom of the baking dish. Then top with a thin layer of the cut corn tortillas. Then top with the Beehive Meals Sweet Chicken Tacos, cheese and bean mixture. Repeat this process until the baking dish is full. Pour the leftover enchilada sauce on top, and top with the rest of the cheese.

4. Bake in the oven, uncovered, at 350 degrees for 20-25 minutes, or until cheese is melted and lightly golden brown.

5. Remove from oven, then top with sour cream, salsa, guacamole, cilantro, or any of your favorite toppings! Serve with a side salad, and enjoy!
