Sweet n’ Sour Chicken Spring Rolls are a light, refreshing twist on takeout favorites, filled with tender chicken, crisp veggies, and fresh mint, all wrapped in rice paper and perfect for dipping.

Ingredients

1 Cup Beehive Meals Sweet n' Sour Chicken
4 Rice paper wrappers
1/4 Bunch Mint, fresh individual leaves
1/8 Cup Carrots, shredded
1/4 Cucumber, thin sticks
Hoisin or peanut sauce (or mixture of both equal parts and water to desired consistency)

8 Rice paper wrappers
1/2 Bunch Mint, fresh individual leaves
1/4 Cup Carrots, shredded
1/2 Cucumber, thin sticks

2 Cups Beehive Meals Sweet n' Sour Chicken
12 Rice paper wrappers
3/4 Bunch Mint, fresh individual leaves
1/2 Cup Carrots, shredded
3/4 Cucumber, thin sticks
Hoisin or peanut sauce (or mixture of both equal parts and water to desired consistency)

Ingredients

2 1/2 Cups Beehive Meals Sweet n' Sour Chicken
16 Rice paper wrappers
1 Bunch Mint, fresh individual leaves
3/4 Cup Carrots, shredded
1 Cucumber, thin sticks
Hoisin or peanut sauce (or mixture of both equal parts and water to desired consistency)

Instructions

1. Follow cooking instructions to cook Sweet n' Sour Chicken.

2. Prepare vegetables and set aside.

3. Soak rice wrappers in warm water one at a time per package instructions.

4. Layer mint, warmed meat mixture, carrots and cucumbers horzontally on the bottom 1/3 of the wrappers, leaving about 1" on each side.

5. With wet finters, fold right and left edges over filling then roll up spring rolls.

6. Serve immediately or store in the refrigerator until ready to serve.

7. Can cut rolls diagonally in hlaf for serving and pair with a dipping sauce of choice.
