1/4 Cup cheddar cheese, shredded
1 Tablespoon cilantro, chopped
2 Tablespoons sour cream or greek yogurt
Lime juice, squeezed to taste

3 Bell Peppers, any color
3/4 Cup cheddar cheese, shredded
3 Tablespoons cilantro, chopped
6 Tablespoons sour cream or greek yogurt

4 Bell Peppers, any color
1 Cup cheddar cheese, shredded
4 Tablespoons cilantro, chopped

Instructions
1. Follow cooking instructions to cook Taco Mac.
2. Slice peppers in half lengthwise, salt and pepper then arrange in sprayed 9x13.
3. Fill peppers with macaroni mixture and top with cheese.
4. Bake 350 for 20-25 minutes or until peppers are fork tender and cheese is browned.
5. Remove from the oven and top with a dollop of sour cream or yogurt and garnish of cilantro.
6. If desired, squeeze fresh lime juice over all.
