Meatball Marinara with Spaghetti Squash

The Meatball Marinara Zoodle Bowl is a low-carb, flavor-packed dish featuring tender meatballs over zucchini noodles with creamy ricotta, herby pesto, and a touch of heat.

Ingredients

10 Beehive Meals Meatballs + Sauce
2 Cups Zoodles (squash "noodles)
1/2 Cup Ricotta Cheese
1/4 Cup Pesto
1 Tablespoon Olive Oil
Red chili flakes, to taste
Salt and pepper, to taste

Instructions

1. Follow Slow Cooking Instructions to cook Beehive Meals Meatball Marinara.

2. Heat oil in a skillet then add zoodles and saute for 3 minutes or until tender. Add a sprinkle of salt and pepper to taste. (buy zoodles prepared or shred your own 1 medium squash with yield about 2 cups of zoodles)

3. Into individual bowls, divide the noodles into serving portions.

4. Top noodles in each bowl with 5 warm meatballs and a few spoonfuls of marinara sauce from the crockpot.

5. Add a couple dollops of ricotta cheese and a drizzle of pesto over top.

6. If desired, add a sprinkling of red pepper chili flakes to taste.
