Our slow cooked and flavorful Salsa Verde Chicken served as delicious Southwest egg rolls, filled with tender chicken, black beans, corn, tomatoes, cheese, and a delicious light chipotle sauce.

1  1/3 cups Beehive Meals Salsa Verde Chicken
4 Egg Roll Wrappers
1/4 cup Corn
1/4 cup Black Beans
1/2 cup Shredded Cheese
1/4 cup Diced Tomatoes
1 Tablespoon Light Chipotle Mayo

4 cups Beehive Meals Salsa Verde Chicken
12 Egg Roll Wrappers
3/4 cup Corn
3/4 cup Black Beans
1  1/2 cups Shredded Cheese
3/4 cup Diced Tomatoes
3 Tablespoons Light Chipotle Mayo

5  1/3 cups Beehive Meals Salsa Verde Chicken
16 Egg Roll Wrappers
1 cup Corn
1 cup Black Beans
2 cups Shredded Cheese
1 cup Diced Tomatoes
1/4 cup Light Chipotle Mayo

Instructions

1. Follow Slow Cooking Instructions to cook Beehive Meals Salsa Verde Chicken.

2. Add Beehive Meals Salsa Verde Chicken, black beans, corn, shredded cheese, diced tomatoes, and light chipotle mayo to a bowl, then stir until combined. Add about 1/4 cup of this mixture to the center of each egg roll wrapper. Then tuck the edges in, then roll and fold like a burrito.

3. Lightly spray with avocado oil, then bake in the airfryer at 375 degrees for 8 minutes, flipping halfway through.

4. Then remove from airfryer and serve with a side of plain greek yogurt or more light chipotle mayo for a dipping sauce. Enjoy!
