1 cup (84g)Cooked Rotini Pasta (~1/2 cup (42g), dry)
1/4 cup (30g)Cucumber, sliced
1/4 cup (42g)Cherry Tomatoes, halved/quartered
1/4 cup (32g)Red Onion, diced
1/4 cup (38g)Chickpeas
1/4 cup (56g)Kalamata Olives, halved
2 Tbsp (14g)Feta Cheese

Instructions

Step 1:

Follow Slow Cooking Instructions to cook Parmesan Herb Chicken.

Step 2:

Boil pasta. Drain, and set aside. 

In a large bowl, combine all other ingredients. Add pasta and stir until combined. 

Step 3:

Serve 1 1/2 cups (257g) per person.

Can be served immediately or placed in an airtight container and stored in the fridge to serve cold later.
