Parmesan Herb Chicken and Lemon Rice Bake

A creamy and rich rice bake bursting with tangy parmesan and citrus flavors, and topped with our Parmesan Herb Chicken and fresh kale for added flavor and nutrients. 


Recipe and Ingredients

1  1/3 cups
Beehive Meals Parmesan Herb Chicken
1/4 cupWhite Onion, diced
1 teaspoonGarlic, minced
1 cupWhite Rice
1  1/2 cupsLow-Sodium Chicken Broth
1/2 cupFairlife Whole Milk
(or coconut milk for dairy free option)
PinchBlack Pepper
1/2 TablespoonLemon Juice
1 cupFresh Kale, chopped
1/2 cupParmesan Cheese, shredded


Step 1:

Follow Slow Cooking Instructions to cook chicken from our Parmesan Herb Chicken.

Step 2:

In a large saute pan, heat up a small amount of olive oil over medium heat, then saute the onions until they begin to sweat, then add the garlic and saute until aromatic. Then add the rice and continute to saute over medium heat until rice is slightly translucent. 

Step 3:

Next, add the low-sodium chicken broth, milk, lemon juice, and black pepper and bring to a boil over high heat and boil for 5 minutes. Reduced heat to low, cover with lid, and simmer until all the liquid is absorbed. Add chopped kale and stir until cooked down and incorporated into the meal. Add Beehive Meals Parmesan Herb Chicken and top with shredded parmesan cheese and replace lid to melt the cheese.
