Cooking Instructions

Step 1:

Set time. Cook in slow cooker on LOW for 2-3 hours [thawed] or 3-4 hours [frozen].

Step 2:

Remove chicken and shred. You'll know the chicken is done when it is tender and shreds easily. Return shredded chicken back to pot and stir.

Step 3:

Plate and serve as desired.

Slow Cooker (Crockpot) Sizes

The size of your crockpot can affect the outcome of your meal. If your crockpot is smaller than what we recommend, you may need to cook your meal a little longer. If it’s larger than what we recommend you may need to shorten the cooking time. You will need to keep a close eye on the chicken as it cooks. Here are the crockpot sizes we recommend for each meal size to help cook your meals just right:

Smaller Portion (SP) - 3-Quart Crockpot
Regular Portion (RP) - 4-Quart Crockpot
Bigger Portion (BP) - 6-Quart Crockpot

Serving Suggestions

Salsa Verde Chicken is flexible enough to be served in number of different ways. Our first recommendation is for you try something new and serve the chicken over crispy corn tostadas layered with refried beans, fresh lettuce, diced tomatoes, cilantro, queso fresco, and avocado.

In its simplest form, Salsa Chicken is a meal-in-a-bowl stew, and the toppings are key to making it feel special. You can add 1 cup of frozen or fresh corn, or a drained 15-ounce can of black beans or pinto beans; just add them at the end along with the fresh cilantro and scallions. 

You could also serve the chicken over rice or a whole grain, or use it as a taco or enchilada filling. We even used it as a filling for homemade air-fryer taquitos. Our Salsa Verde One-Pot Pasta is one of our favorites and will soon be one of your family's favorites if you try it out! It is so simple, delicious, and only requires one pot!
